Entrails? Can't read them when they're in the chicken but you can "read" them once they're out.

Anthropomancy - divination using human entrails and Ichthyomancy using fish ... or how about this Aruspicy - prognostication by inspection of the entrails of victims slain sacrifice... (underquark's sausage with sauce might have been quite aruspicy)... but don't forget the bleigiessen - molybdomancy - divination by dropping metal into water and all the references to hands - are you a palm reader?

Could some of these apply for the position of acceptable alternative answers?

Entrails it is, I wasn't particularly going with chickens but with sheep.

Also, I was going with animals entrails rather than human entrails, but then again, entrails is entrails, so I will have to award the prize to Emm with:
Anthropomancy; Ichthyomancy or Aruspicy.

And a bonus prize for Underquark for showing Emm the way.

Molybdomancy doesn't quite fit the bill.

Now you know the area to look, see if you can get the word/words I was after.

It's either
    Antinopomancy - Divining by entrails of women or children
    Extispicy - divination by examining entrails
    Haruspexopy - divination by examining the entrails of sheep, swine & oxen

All of which has got to be illegal.

Haruspex or the plural haruspices was what I was after or extispicy.

A more modern day approach to haruspex is the practice of ooscopy - the study of the insides of an egg.
