I have three examples at the moment (move the 4 to r5c7 for one, then move the 8 to r1c1 for the other), but this one has the most reasonable solve path IMO. (SE 8.0 with the anti-king weak links fixed)
I believe this is minimal - the best I have for 8c with 8 distinct digits at the moment is 2300+ solutions - but we'll probably be running an exhaustive search to answer that definitively.
